So when Olipop dropped Pineapple Paradise, a limited-edition collab that basically lets you drink SpongeBob's house, we knew we had to do more than just sip it straight from the (collectible!) can. What You'll Need
For the coconut rim (optional, but why wouldn't you):
1 tbsp desiccated coconut, 1 tsp caster sugar, 1 lime wedge for rimming
For the cooler:
4–5 chunks of fresh pineapple (about 2cm cubes)
1 tbsp coconut cream (the thick stuff from the top of the tin)
1 tsp agave syrup or honey
½ a fresh lime, juiced
3–4 fresh mint leaves
A pinch of ground turmeric (optional, for colour and a gentle earthy note)
Ice
1 chilled can of Olipop Pineapple Paradise
Pineapple wedge, mint sprig, or edible flower for garnish
How to Make It
Step 1: Rim the glass. Mix the desiccated coconut and caster sugar on a small plate. Run a lime wedge around the rim of a tall glass, then press it gently into the coconut mixture. Tap off the excess and set it aside. It should look like the rim just came back from a holiday.
Step 2: Muddle the pineapple. Drop the pineapple chunks, mint leaves, agave syrup, and a tiny pinch of turmeric into the bottom of your glass. Gently muddle, pressing just enough to release the juices and bruise the mint. You want tropical, not pulpy.
